With a quater cow you would get approximately 110 pounds hanging weight. It will be approximately 55 pounds of ground beef, and the other 55 pounds are in cuts like steaks, roasts, ribs, brisket, tenderloin, etc.
The cuts usually consist of 20-25% Steaks, 25-35% Roasts, Stew Meat & Short Ribs, and 40-50% Ground Beef, Patties or Ground Chuck. That means you can get premium cuts such as Filet Mignon and T-Bones for lower than market price per pound. We don't process Whole Beef orders until they are placed.
